Experience the full fusion of Melbourne's international influences at this one-off feast curated by Adam D'Sylva, in collaboration with his head chefs from Coda, Tonka and Lollo.
The border-blurring flavours from all three restaurants will mingle even further when D'Sylva hosts an exclusive one-off dinner for *Broadsheet* readers. Dubbed "A Taste of Multicultural Australia", this unique dining experience will see D'Sylva collaborate closely with Lollo and W Melbourne executive chef Jihun Kim, Tonka head chef Hendri Budiman, and Coda head chef and Tonka executive pastry chef Kay-Lene Tan. The special menu will draw on D'Sylva's Indian-Italian heritage and the individual backgrounds of Kim (Korean), Budiman (Singaporean) and Tan (Indonesian).
The fusion-forward evening kicks off with a choice of beverage on arrival: either a glass of Barringwood Tasmanian cuvée brut; a Deeds brut IPA with lemon aspen that's brewed exclusively for W Melbourne; or Lollo's signature cocktail the Karen 3.0, a twist on the Aperol Spritz that adds absinthe and French ruby red grapefruit aperitif Pampelle.
Each course comes with a paired wine selected by the Lollo team, and all the dishes are designed to be shared. With limited seating capped at just 60 diners, this is an intimate curated dinner, along with a DJ providing a suitably stylish soundtrack to the night. Highlights of the menu include tea-smoked duck breast and ricotta and asparagus tortellini for appetisers, and Korean-style soy-braised beef and Coda's popular roasted barramundi with jungle aromats for mains, along with sides and other inventive embellishments to remember.
Just save space for dessert: a modern pavlova mingling lemon myrtle cream, lychee and raspberries. By the end, the distinctions between Melbourne's many international cuisines will literally melt in your mouth.
